There's a whole new menu....at the Brisbane Convention Centre

A passionate and committed Food & Beverage focus is at the very heart of the operations of the Brisbane Convention & Exhibition Centre.

Since opening, the Centre has remained steadfastly true to its traditional core values of producing a quality, innovative product using the finest and freshest of Queensland and Australian produce, committed to delivering a dining experience comparable to the most celebrated international cuisine.

Now twelve years and 30 catering awards later and having honoured that initial promise, it is time to take up the challenge of moving onwards and upwards to new culinary heights and to create new benchmarks in the delivery of modern style cuisine across all events – large and small.

Food & Beverage Director, Kevin Gulliver, says the changes to the Centre’s Food & Beverage operation relate to structure, content, presentation and service styles.  They are, he says, the most significant changes to be introduced. “Underpinning this contemporisation of classic culinary and service traditions, is our commitment to deliver inspirational, quality cuisine and outstanding service.”

Over the years the Centre has invested in world-class technology for its kitchen operations to accommodate first class food preparation as well as adherence to the very strict food safety standards. To enable relevant style presentation and to highlight the culinary artistry of the new food styles, the Centre is purchasing new china and other presentation equipment.

The most significant changes are to the Centre’s Menu. Clients choose from a concise menu, which offers greater choice and flexibility, along with contemporary food options with a stronger focus on fresh and healthy eating.

Overseeing the development of these changes to the Centre’s menu is Executive Chef, Martin Latter and his team of highly skilled, diverse and internationally experienced chefs.  Chef Latter, who draws on his classic European training as the foundation for everything he does, is the main architect of the changes, which are in accord with his preference for the lighter, contemporary style of food. They are he says, a response to the expectations and choices of today’s lifestyle.

The new changes will have a real and tangible benefit for the Centre’s clients, including providing a greater choice of flavours and cooking styles across the culinary spectrum, new service styles offering greater flexibility of food choices for different event types and greater customisation of menu selection.

Throughout the introduction of the changes, the Centre’s core Food & Beverage values remain inviolable - they are service excellence, unmatched quality and innovation and creativity.
