BCEC Executive Chef, Martin Latter’s lifelong ‘fresh is best’ approach to food is the cornerstone of the Centre’s catering offering. The Centre has long made a priority of sourcing only the highest quality of local, seasonal produce, taking full advantage of Queensland’s abundance of top quality fresh produce.


Our Chefs work to the fundamental principles of sophisticated simplicity, quality and freshness, talking daily to local farmers and producers – our olive oil is from a small olive grove 80 kilometers from the Centre, our strawberries are from the local Redland Bay area and we source our seafood from Mooloolaba on the Sunshine Coast. An important part of our integrity and who we are and the passion we share for our food is our absolute dedication to quality and sustainability.   


Everything is prepared in-house in the Centre’s kitchens from fresh ingredients to final product and in this way we can offer our clients the ultimate in flexibility and choice and a culinary experience second to none.


Our award winning chefs will be delighted to work with you personally to develop and customise menus to suit your preferences, fulfilling our promise – more personal, more choice.
